The Perfect Summer Meal
This meal was completely decadent, yet super healthy, simple to prepare, and beautiful for a dinner party (or just yourself!)
Use one of the recipes, or combine them for an unforgettable meal. I added some sautéed spinach on the side to add some green color to the dish. Super simple - heat up some butter in a large pot or frying pan, add your spinach, some garlic powder, cook for a few minutes, add some lemon juice and enjoy!
Get started with your veggies, and then do the salmon and spinach as the last step.
Maple Dijon Carrots and Radishes
*If you have never tried a roasted radish, make this recipe immediately! Roasting the radishes takes away all the bitterness and spice of the radish, and makes them sweet and delectable!
- Carrots - peeled and cut in half lengthwise - just use however many you want!
- Radishes - cut in half lengthwise
- 1/4 cup maple syrup, 2 tbsp olive oil, and a 1/4 cup mayo whisked together
- Salt, pepper, and red chili flakes
- Pistachios to sprinkle on at the end
Preheat oven to 375. Line a baking sheet with parchment paper, and place your carrots and radishes in a single layer. Pour 2/3 of the maple syrup mixture onto the veggies and toss until they are all coated. Season with salt, pepper and a teeny bit of chili flakes. Roast for 35 minutes, tossing half way through the cook time. Pour the remaining maple mixture over the cooked veggies, sprinkle with pistachios and enjoy!
Cauliflower Puree
* This is an absolute staple for me to replace mashed potatoes. It is light, buttery and perfect for a summer OR winter evening.
- 1 head of cauliflower, roughly chopped
- 2 tbsp butter
- Salt and pepper
In a large pot, place your cauliflower and cover with water. Bring to a boil over medium high heat, lower to a simmer, and simmer until cauliflower is soft, about 10 minutes.
Drain (really well! We don't want a watery cauliflower soup) and transfer to a blender or food processor, add the butter, some salt and pepper and process until smooth and creamy. Be careful not to overblend or you will end up with a soupy mixture.
Pistachio Crusted Salmon
- 2 Salmon Filets (I LOVE using fresh salmon in the summertime - nothing quite beats it)
- 1 tbsp honey, 1 tbsp mayo, 1 tbsp dijon - whisk it together in a bowl and set aside
- 1/4 cup bread crumbs (I make my own with stale gluten free bread)
- 1/4 cup pistachios, chopped up
- Salt and pepper
Preheat oven to 375. Pat your salmon dry with paper towel. Place the salmon on a parchment paper lined baking sheet. Season your salmon with salt and pepper. Lightly coat with the honey mixture, and top with half the bread crumbs and half the pistachios. Use your hands and really pack it on there!
Bake for 15 - 20 minutes. Let rest for 5 minutes and enjoy!
