Roasted Carrot and Avocado Salad with Lime Dressing

Chock full of healthy fats, fibre, and veggies, this is a perfect side dish to accompany any meat!

First Step: Carrots

Preheat oven to 400 degrees. Peel and half lengthwise some carrots. Don’t worry about the amount, just use the amount you will eat! Place the carrots on a parchment paper lined baking sheet, drizzle with some olive oil, minced garlic (4 cloves), salt, pepper and a pinch of cayenne. Roast for 20-25 minutes until they look pretty and caramelized.

Second Step: Dressing

Whisk together 3 tbsp olive oil, the zest and juice of a lime, salt, pepper and a pinch of cayenne.

Third Step: Assemble

Place some greens on a large platter. Top with the carrots, and then scatter avocado slices on top. Drizzle with dressing and sprinkle pumpkin seeds on top.
